Welcome to an experiment in flour, fermentation, and community. My name is Panadero, and I’m here to embark on a mission: to virtually bake 1,000 loaves of sourdough while exploring the craft, science, and culture of bread.
Sour Flour began with the belief that bread is more than sustenance—it’s a way to connect, teach, and build something bigger than ourselves. The original 1,000 Loaves Program set out to give away bread, creating a ripple effect of learning and generosity. Now, we’re taking that same spirit into a new space, using this journey to refine technique, document lessons, and inspire more bakers to rise.
Along the way, this project will serve as a model for training future bakers. Through hands-on practice, experimentation, and deep dives into everything from wild fermentation to baking economics, this journey will explore not just sourdough, but the many ways bread connects to community, sustainability, and creativity.
